Although ‘pigs in blankets’ are traditionally a reserve of Christmas cookery why can’t they be a mid week treat? Here is a very basic recipe to make jumbo pigs in blankets with champ – an Irish dish of mash potatoes with spring onions.
Serves: 3 Time: 40 minutes
6 large pork sausages
6-12 rashers of smoked bacon (dependant on size)
1kg of starchy potatoes i.e. maris piper
3 tablespoons of butter
50ml of whole milk
8 spring onions
- Peel your potatoes and retain a good handful of the peels. Boil the potatoes in salted water for 30 minutes.
- Meanwhile wrap the sausages in the bacon and cook in a 200 degree Celsius oven for 20-25 minutes until the sausages are cooked and bacon crisp.
- Simmer the milk and potatoes peels for 10 minutes in a saucepan. Then remove the peels and add the roughly chopped spring onions and butter and continue to simmer until the spring onions are soft.
- Mash the potatoes adding in the spring onion/milk/butter combination until a smooth mash forms. Add any extra salt to taste.
- Serve with the sausages.
