When you marry someone Irish you need to find as many ways to cook a potato as you can. This is one of my favourites. Plenty of flavour and they only need a little oil to get the crisp texture.

500g Baby Potatoes
3 tablespoons of Rapeseed Oil
4 cloves of Garlic
3 sprigs of Rosemary
3 sprigs of Thyme
Salt
1. Preheat the oven to 180 degrees Celsius (360 degrees Fahrenheit).
2. Slice the potatoes lengthwise. Without removing the skins of the garlic cloves cut them in half.
3. Add the oil to a baking tray and cover equally. Place the potatoes sliced side down on the tray and add the thyme, garlic and rosemary around the potatoes.
4. Roast for 45 mins.
5. Remove from the oven and salt to taste.
