No.114 “Kuchumber” Cucumber salad

This is not a ‘rocket science’ recipe but for me is essential when having an Indian curry, mostly to give relief from the fireball of a curry you have accidently made. This a simple salad of cucumber, tomato and onion that can be found all the way from Greece to India in different combinations. This time a simple drenching with lime or lemon juice will do well. The secret here is to make this first before proceeding to make your curry so the lemon or lime juice has time to take the sharp edge off the onions.

Serves: 2-3

Time: 10 minutes

Difficulty: Straight forward

1 Cucumber

2 Tomatoes

1 Red Onion

10 Mint Leaves

30ml of Lime or Lemon Juice

Salt

  1. Dice the tomato. De-seed then dice the cucumber. Finely slice the onion. Add to a large bowl.
  2. Take 5 of the mint leaves and roll into a cigar shape then finely chop. Add to the vegetables.
  3. Add the lemon or lime juice and a little salt. Mix well and leave at least 10 minutes before serving.
