Lemonade is not rocket science and the options are infinite from rosemary to raspberry. However, fiery ginger is the recipe I am going to share.
A basic lemonade recipe consists of 13% lemon juice, 10% sugar syrup, made up to 100% with water. This is a guide and everyone likes theirs differently so repeated tasting is essential to get it just right. Also, the ginger element is basically smoothied ginger so having some extra on the side can mean that those who want more heat can add extra in – keeping everyone happy!
Makes 1 litre
130ml of freshly squeezed lemon (4-5 lemons)
30g of peeled ginger
100g of caster sugar
Water
- In a food processor or blender add the ginger and 50ml of water and blend until you have a murky solution.
- Add 100ml of boiling water to the sugar and mix until dissolved. Ideally refrigerate until cold.
- In a jug add the lemon juice to the sugar solution and top up with water to 800ml. Taste to see if too sweet or sour. Add extra lemon juice or sugar as required.
- Slowly add the ginger until your liking.
