No.71 Baked Baby Potatoes

This is the first of a few potato recipes that always come in handy. This recipe is one of the favourites. Its a simple toss everything in the oven job. Equally it is well suited to mid week dinners and dinner parties.

I made these for my grandparents along with a roasted side of salmon and all they could talk about was how much they enjoyed these potatoes.


Time: 1 hour

Serves: 4

1kg of baby potatoes

2 tablespoons of rapeseed oil

2 tablespoons of butter

1 tablespoon of salt

  1. In a cast iron skillet or, if you don’t have one, a large baking dish, assemble your potatoes. Drizzle oil and spread the salt across the potatoes. Now mix together until all the potatoes are coated in oil.
  2. Place small knobs of butter over the potatoes and place in an oven at 210 degrees Celsius.
  3. Bake for 1 hour turning the potatoes every 15 minutes.
  4. Serve.
