This is the first of a few potato recipes that always come in handy. This recipe is one of the favourites. Its a simple toss everything in the oven job. Equally it is well suited to mid week dinners and dinner parties.
I made these for my grandparents along with a roasted side of salmon and all they could talk about was how much they enjoyed these potatoes.
Time: 1 hour
1kg of baby potatoes
2 tablespoons of rapeseed oil
2 tablespoons of butter
1 tablespoon of salt
- In a cast iron skillet or, if you don’t have one, a large baking dish, assemble your potatoes. Drizzle oil and spread the salt across the potatoes. Now mix together until all the potatoes are coated in oil.
- Place small knobs of butter over the potatoes and place in an oven at 210 degrees Celsius.
- Bake for 1 hour turning the potatoes every 15 minutes.
