No.119 Mandarin, Amaretti & Ricotta Mess

Is this a deconstructed cheesecake? The components of biscuit, cheese and cream are all there but this is lighter and somewhat more elegant. Refreshing mandarin segments goes well with the almond amaretti biscuit. I do like to make my own amaretti as the store bought ones lack the chew that you get when you make them yourself. Serves: 4 

Time: 15 Minutes 

Difficulty: Straight Forward 

200g Ricotta 

200ml of Double Cream 

1 tin of  Mandarin Segments

3 tablespoons of Honey 

10 Mint Leaves 

100g Amaretti Biscuits 

 

  1. Whip the ricotta, honey  and cream together to loose peaks. 
  2. Crumble the amaretti into thick chunks. 
  3. Assemble half the ricotta cream on the plate and add half the mandarin segments and half of the amaretti
  4. Repeat step 3 and top with the mint leaves
