Is this a deconstructed cheesecake? The components of biscuit, cheese and cream are all there but this is lighter and somewhat more elegant. Refreshing mandarin segments goes well with the almond amaretti biscuit. I do like to make my own amaretti as the store bought ones lack the chew that you get when you make them yourself. 200g Ricotta
200ml of Double Cream
1 tin of Mandarin Segments
3 tablespoons of Honey
10 Mint Leaves
100g Amaretti Biscuits
- Whip the ricotta, honey and cream together to loose peaks.
- Crumble the amaretti into thick chunks.
- Assemble half the ricotta cream on the plate and add half the mandarin segments and half of the amaretti.
- Repeat step 3 and top with the mint leaves.
